Cheese - What A Tomato
1 medium tomato, cut in half
2 t. light mayo
1 t. bread crumbs
2 t. fat free shredded Mozzarella cheese
Put tomato halves, cut side up, on a pie plate turned upside down and spread each with one teaspoon of mayo. Sprinkle with bread crumbs and pop in the broiler for 2-3 minutes. Take out and top with cheese. Put back in broiler until cheese melts.
Have both halves for 95 calories.

Your Little Secret Spinach Dip
10-oz. pkg. frozen chopped spinach, thawed & squeezed dry
1/4 c. sliced water chestnuts
2 slices sweet onion
1/2 c. fat free plain yogurt
1 T. light mayo
1 t. Mrs. Dash
1/8 t. thyme
Few shakes nutmeg
Put everything in the blender and process until finely chopped. Chill well before serving.
Makes 1-1/4 cups at less than 8 calories per tablespoon.

Chocolaty Yogurt
1 packet stevia
1 T. unsweetened cocoa
1/4 t. vanilla
Mix it up and savor it slowly for 74 calories.

Corn Crispies
Lay the tortillas on a paper towel, sprinkle with a little water and nuke for 30 seconds. Cut each tortilla in sixths. Spray a cookie sheet with cooking spray. Lay out the tortillas in a single layer and spray with cooking spray. Sprinkle with the Mrs. Dash and bake at 400 degrees for about 10-12 minutes or until crisp.
Makes 36 chips. Six chips are 25 calories

1 T. frozen orange juice concentrate
2 drops of almond or vanilla extract
1/2 packet stevia
Mix it all together and enjoy. You can also freeze this in little paper cups with popsicle stick handles for a frozen treat - like late at night when you're sitting in front of your computer with glazed eyes telling yourself you really, really need to go to bed.
