Sandwiches
Who says you can't eat sandwiches while you're losing weight? These yummy ones are just a few of my favorites.
1/4 c. chopped cooked chicken
1/2 diced medium apple
1 t. lemon juice
1 1/2 t. light mayo
dash of curry powder
1 large leaf of romaine or butter lettuce

1 slice whole grain bread
1 t. reduced fat peanut butter
1 chunk (about 1/3) of banana
Mash the banana and peanut butter together. Cut the bread slice in half and spread with the mixture. Top with the other half of the bread. Spray your little skillet with cooking spray, heat to medium and toast the sandwich on both sides. Do it right. Elvis is watching you.

Open-Faced Italian Omelet Sandwich

1/2 t. minced garlic
1/4 c. liquid egg product
1/2 c. chopped baby spinach
1/4 t. dried oregano
Black pepper to taste
2 or 3 grape tomatoes, halved
1 slice whole grain bread, toasted
Spray skillet with cooking spray and cook onions and garlic for a minute or two. Meanwhile, mix egg stuff, spinach, oregano and pepper. Pour into the pan with the onions and cook until lightly browned on the bottom. Scatter the tomatoes over the top and flip over to finish cooking. Serve on the toast and eat while humming 'O Sole Mio'.
